General questions on Junbucha & Kombucha

Many of us have heard about Kombucha but not Junbucha as it is relatively unknown.

Junbucha is a type of fermented tea related to Kombucha. Both need to ferment with a starter tea and a SCOBY (symbiotic culture of bacteria and yeast).

The difference of Junbucha and Kombucha:

  1. Different ingredients are used to ferment the tea.

Junbucha is made up of raw honey and green tea while Kombucha is made up of Cane sugar and black tea.

  1. Different taste

As the ingredients used are different, the taste of it will be different. Jun tastes more delicate with a floral notes and light tartness. In contrast, Kombucha tastes more sour and much less delicate.

  1. Fermenting period

Junbucha takes a few days while Kombucha takes a week or longer.

  1. Bacterial

Jun has more lactobacillus bacteria and Kombucha have slightly lesser. Lactobacillus is a probiotic which is a good bacteria that is normally found in human digestive and urinary tract. It can help the body to break down food, absorb nutrients, fight off bad organisms that might cause disease.

  • Before, during, and after a meal to aid digestion
  • Mid-afternoon or post-workout for an energy boost
  • After dinner or evening as a healthier alternative to alcohol

The recommended servings are 2 cups per day.

Kombucha and Junbucha may have a little alcohol level in it due to the fermentation process. The alcohol level is usually less than 0.5%
